Fresh air and long walks awaken the appetite, and in Montefeltro there is plenty to satisfy it.
If Urbino is the queen of the territory, the truffle is queen of the table. Acqualagna, Sant’Angelo in Vado and Sant’Agata Feltria are the main locations where the precious tuber begins the journey which will take in to the tables of the world.
But Montefeltro is not just truffles (though these may be the envy of the world!). Every corner of the land here has its own specialities. The most famous are Casciotta di Urbino (ewe’smilk cheese), the mature cheeses of Talamello, Cantiano bread.
Near the border with Umbria you can find fine salamis and seasoned hams: most famous of all, “Prosciutto di Carpegna”.
And in Montefletro beef cattle roam, almost wild.
The woods give fine crops of mushrooms and woodland fruits. Rare herbs grown in the meadows among the vegetables and pulses, scenting the air with appetising aromas which reappear in home-made pasta dishes, soups, and meat dishes.
We could say that Duke Federico, and our ancestors and we ourselves too, have cultivated yhe gardens of Art and Knowledge, and also of Flavour!
